Hi guys.

I hope the last post made you think a little bit about some of the bad nutritional habits current society has ingrained in us. Part of what I want to achieve with this blog is to make you question and be more aware of these things that I consider big problems and obstacles towards having a healthy diet in the long term. Today I am sharing another recipe with you. This one I only got to try a couple of times, but it is very simple to make and can be a good one to prep for a few meals of the week.

 

Stuffed peppers: (serves 4)

– Ingredients:

  • 4 red peppers
  • 500g of mince (you can use beef, turkey, or whatever kind of meat you)
  • 200g mushrooms (Portobello have a more intense flavor)
  • 1 onion
  • 1 can of chopped tomatoes
  • Tomato paste as needed
  • Some salt, pepper
  • A ton of spices!! I used garlic, smoked paprika, chili powder, oregano, turmeric. Just add as much or as little as you want and feel free to add any other ones you may have in your spice cabinet

 

– Instructions:

  • Wash and cut the peppers in half, clean the core, and place the peppers on a baking tray
  • Cut the the mushrooms and onions into small pieces and cook them in olive oil for a few minutes until they soften and brown
  • Add the mince and let it cook for a few extra minutes
  • Add the tomato sauce, tomato paste, and all the spices you want
  • Let it all cook for another 8-10 minutes
  • Once the meat is cooked and you are happy with the consistency you can go ahead and stuff the peppers. Make sure to fill them up quite nicely but be careful to not break the bottom of pepper (if you do it’s no big deal, it might just make a bit of a mess)
  • Top it up with some cheese and let them cook in the oven for about 10 minutes. You can use the grill for the last 1-2 minutes to give the cheese some extra color

 

– Tips:

  • You can eat these on their own or you can serve them with some rice and more veggies
  • They hold up well in the fridge for a few days so you can cook all 4 peppers and just have 3 extra meals for later in the week
  • Two filled halves are actually quite filling
  • As an alternative you can stuff tomatoes instead. Also very good but unfortunately you can’t add as much meat to them and they break more easily.
